I didnt measure anything when I was making this so i will do my best to guesstimate!
Ingredients
1 1/2 c chopped broccoli (i used the tops)
1 c chopped cauliflower
1 5.5 oz can of coconut milk
2 tbl spoons chopped ginger (i could have totally made this up..i just chopped up some ginger and threw it in there..use your best judgement)
1 tbl spoon grapeseed oil (olive oil works too im sure, i just didnt have any)
Preparation
1) heat up oil in pan, a wok works best
2) throw everything in pan and let heat up for a few minutes
3) stir occasionally until cooked to desired tenderness, i like it the best when the veggies are still kinda cruntchy
Note: this dish is best served on quinoa or millet! and i like to add some avocado to the side.

Quinoa Banana Bread/Muffins
This recipe works for muffins or bread!
Ingredients
1/2 c quinoa flakes
1/2 c quinoa flour
4 tablespoons ground flax seeds (I used bob's redmill)
8 tablespoons of water (I experimented with using 4 tablespoons of water and 4 of unsweetened applesauce and it was delicious
2 ripe bananas
2 tsp baking powder
1 tsp baking soda
1 1/4 tsp xantham gum (optional)
1/2 teaspoon sea salt (optional, i never use it and havent had any problems)
1/4 c of agave (i like to add a little bit of maple syrup, yummmmm)
1/2 c vegan chocolate chips
Preparation
1) preheat oven to 400
2) mix ground flax seed until thick and gooey (i use a milk frother)
3) mix flour, flakes, baking soda, baking powder, xantham gum, chocolate chips
4) mash up bananas in separate bowl
5) add flax seed and agave (and maple syrup) to bananas
6) add dry ingredients
7) pour into baking cups (fill half way), or bread pan (fill 3/4)
8) bake for 20 minutes

quinoa tabbouleh and cheesecake
The tabbouleh was awesome but the cheesecake needs some work....
Quinoa Tabbouleh

3/4 c lemon juice
3/4 c diced tomatoes
3/4 c diced cucumbers
1/4 c apple juice
1/4 c chopped parsley
1/4 c fresh chopped mint
Preparation:
Combine the quinoa and water ina pot a cook until quinoa is done. Let cool and add all ingredients together and
mix. Refrigerate, serve chilled.
This recipe was originally for brown rice but i decided to try it with quinoa and it is really really good. the cheese cake got messed up because of the altitude, I will figure it out though....the blender we have is also pretty bad and the motor kept burning up s0 its not as smooth as it should be...i think it needs a little bit more vanilla in it though maybe?
